Cheesy Chive Potatoes
Cooked potatoes are more exciting when dressed up a bit with cottage cheese or chives.

Directions
- If potatoes have been refrigerated, place them in a steamer over boiling water for about 10 minutes.
- In a warm overproof bowl, roughly mash potatoes; stir in cottage cheese, chives, salt and pepper.
- Serve immediately or keep warm in 100°C (200°F) oven.
Microwave Directions
In a microwaveable container, roughly mash potatoes; stir in cottage cheese, chives, salt and pepper. Cover with lid. Microwave at High (100%), rotating halfway through cooking time, for 5 minutes
